This month, we’re making delicious Blackberry & Oat Lunchbox Muffins. Blackberries are bursting from the hedges all over Ireland right now, and they taste absolutely gorgeous in these soft, fruity muffins.
They’re every bit as delicious as blueberry muffins possibly even better! Perfect for a quick breakfast, an after-school snack or a little homemade treat tucked into a lunchbox, this is a brilliant bake for the whole family to make and enjoy together.

WHAT WE’RE MAKING
Blackberry & Oat Lunchbox Muffins
During the bake-along, kids will learn how to weigh and measure ingredients accurately, whisk wet ingredients and gently fold everything together without overmixing. They’ll practise dividing the mixture evenly between the cases and discover how GEM baking powder helps their muffins rise and become beautifully light and fluffy.
The GEM dark brown sugar adds a gorgeous hint of caramel and helps keep the muffins wonderfully soft and moist.
It’s a simple and delicious recipe for getting the whole family into the kitchen together and we think these muffins will quickly become a firm favourite in your house!
