The sweet potato adds moisture and a gorgeous texture, meaning you get all the indulgence of a classic brownie with a lighter twist. Perfect for January baking, or when you want something easy and comforting without overdoing it. This is healthy-ish baking done right.

Ingredients

  • For the Brownie:

  • 1 large sweet potato (230gcooked puree needed)

  • 100ml maple syrup

  • 40g Gem sugar stevia blend

  • 2 medium eggs

  • 25ml vegetable oil

  • 50g cocoa powder

  • Pinch salt

  • 1tsp Gem baking powder

  • 60g Gem plain flour

  • 50g Gem walnuts, chopped

  • 50g Gem dark chocolate chips

  • To Decorate:

  • 50g Gem dark chocolate chips, melted

  • 30g Gem walnuts, chopped

Instructions

Preheat the oven to 200°C/180°C fan

Cut the sweet potato in half, place it on a baking tray, and bake in the centre of the oven for45–60 minutes, or until soft when pierced with a knife.

Remove from the oven and allow to cool for 5 minutes, then carefully scoop out the fleshand blitz in a food processor until smooth. If you don’t have a processor, mash very well witha fork. Set aside.

In a large bowl, whisktogether the eggs, oil, Gem Sugar Stevia Blend, and maple syrup.

Add the sweet potato purée and mix to combine.

Sieve in the flour, salt, baking powder, and cocoa, and mix until smooth.

Fold in the chopped walnuts and chocolate chips.

Reduce the oven temperature to 180°C/160°C fan and line an 8 -inch square baking tin with parchment. Spoon in the brownie batter and level the top. Bake for 25 – 30 minutes, or until just cooked through.

Remove from the oven and allow to cool completely before lifting out of the tin.

To serve, drizzle with melted chocolate, sprinkle with chopped walnuts, and enjoy
