Ingredients

  • For the Mousse:

  • 170g Gem dark chocolate chips

  • 250ml semi-whipped single cream

  • 3 medium egg yolks

  • 1 whole medium egg

  • 100g Gem caster sugar

  • 60ml water

  • For the Dipped Strawberries:

  • 6 medium strawberriChocolate-dippedes

  • 100g Gem dark chocolate chips

  • 100g Gem desiccated coconut

Instructions

For the mousse, whip the cream and keep it chilled until needed.
Melt the dark chocolate in a heatproof bowl set over gently simmering water and keep warm.

Whisk the egg yolks and whole egg in a bowl or stand mixer for about 5 minutes, until thickand pale.

Place the sugar and waterin a saucepan over medium heat and bring to the boil, stirring until the sugar dissolves. Carefully pour the hot syrup over the eggs, whisking continuously,and continue to whisk until the mixture is cold, thick, and glossy.

Fold the warm melted chocolateinto the egg mixture, followed by the whipped cream, using a spatula until fully combined.

While still soft, divide the mousse between 6 serving cups and refrigerate overnight.

For the strawberries, melt the dark chocolate, dip each strawberry, then rollin desiccated coconut. Chill for 10 minutes to set.

To serve, top each mousse with a dipped strawberry and enjoy straight from the fridge.
