Equipment

  • Oven

  • Weighing scales

  • 1 x 2lb loaf tin

  • Parchment paper/paper loaf tin liner

  • Mixing bowl

  • Sieve

  • Wooden spoon

  • Pastry brush

  • Chopping board

  • Small knife

Ingredients

  • 225g Gem self-raising flour

  • 125g butter, soft

  • 200g Gem soft light brown sugar

  • 2 medium eggs

  • 3 large bananas

  • 1 tsp ground ginger

  • 1 tbsp treacle

  • 50g Gem crystallised ginger

  • 3 tbsp honey

Line a 2lb loaf tin and set aside.

Preheat your oven to 180C/160C fan.

Mash two of the bananas and set the remaining whole banana to one side.

Into a bowl, mix the sugar and butter until soft and pale.

To this, add the treacle, egg and mashed banana.

Sieve in the flour, ground ginger and mix to combine.

Finally add in the chopped crystallised ginger. Mix.

Scoop into the lined tin and level off the top.

Slice the remaining banana down the middle lengthways and place these slices, cut side up on top of the batter.

Bake in the preheated oven for 50-55 minutes or until a skewer inserted comes out clean.

Remove and allow to cool in the tin before demoulding.

To serve, brush the top of the loaf with warm honey
