GOLDEN NOLLAIG FRUIT TRUFFLES

Ingredients

  • 250g Gem Gourmet Mixed Fruit

  • 200g Gem Golden Marzipan

  • 100g Gem dark chocolate chips, melted

  • 200g Gem milk chocolate chips, for coating

  • 50g Gem white chocolate chips, for drizzling

  • 50g Gem ground almonds

  • 1 tsp mixed spice

  • 2 tbsp freshly squeezed orange juice (or brandy/sherry for adult version)

  • Small bowl of brewed warm tea (for soaking fruit)

Instructions

Soak the fruit

Place the Gem Gourmet Mixed Fruit into a bowl and cover with warm tea.
Leave to soak for at least 30-40 minutes.
Drain well, then squeeze out all excess liquid using your hands. Transfer the fruit to a large mixing bowl.

Prepare the marzipan

Crumble 150g of the Gem Golden Marzipan into the soaked fruit and mix gently.
Cut the remaining marzipan into 15 small pieces and roll into small balls.
Set aside.

Melt the chocolate

Place the sealed bag of dark chocolate chips into a bowl of hot (not boiling) water.
Leave until fully melted.

Make the mixture

Add the 2 tbsp orange juice (or brandy/sherry), mixed spice to the fruit and marzipan mixture along with the melted dark chocolate.
Add the ground almonds and stir with a spoon until a soft, sticky dough forms.
Cover and place in the fridge for at least 4 hours to firm up.

Shape the truffles

Take a small or medium amount of the mixture and roll into a ball.
Flatten slightly in your hand, place a small marzipan ball in the centre, then reshape into a smooth ball.
Repeat until all the mixture is used.
If you make smaller truffles and run out of marzipan, they are just as delicious without a centre.

Chill before coating

Place the prepared truffles in the fridge for 30 minutes before coating.

Coat and decorate

Melt the milk and white chocolate chips by placing each sealed bag into a medium bowl of hot (not boiling) water.
Once fully melted, carefully open each bag and pour the milk chocolate into a medium bowl.
Dip each truffle into the melted milk chocolate, using a skewer or fork to help coat evenly.
Finish by drizzling over the white chocolate for a festive touch.

Store and enjoy

Store in an airtight container in the fridge.

Once fully chilled and hardened, wrap them to gift or simply enjoy with a cup of hot choclate.
