Equipment

  • Muffin cases or a pastry brush for greasing

  • Tablespoon and teaspoon measures

  • Mixing bowl

  • Box grater

  • Wooden spoon

  • Scales

  • Lined baking tray

Ingredients

  • 100g Gem soft dark brown sugar

  • 4 tablespoons rapeseed oil

  • 2 eggs

  • 1 tsp vanilla extract

  • 200g Gem self-raising flour

  • 1 tsp Gem baking powder

  • 1 ripe banana, mashed

  • 1 apple, grated

  • 1 carrot, grated

  • ½ courgette, grated

  • 20g Gem crystallized ginger, chopped

  • ½ tsp cinnamon (optional)

  • 50g Gem chopped walnuts (optional)

  • 50g Gem Gourmet raisins or sultanas

Preheat your oven to 180°C (fan).

Prepare the Muffin Tin:

Line the muffin tin with paper liners or lightly grease it with oil.

Prepare the Fruits and Veggies:

Peel the apple, carrot, and courgette.
Core the apple and cut it into slices.
Grate the apple, carrot, and courgette using a box grater.

Mix the Ingredients:

In a large mixing bowl, combine the mashed banana, grated apple, carrot, and courgette. Mix well.
Add the eggs, rapeseed oil, GEM soft dark brown sugar, and vanilla extract to the fruit and veggie mixture. Stir until everything is well combined.

Add the Dry Ingredients:

Chop the GEM crystallized ginger and add it to the mixture along with the GEM chopped walnuts and GEM raisins or sultanas.
Sift in the GEM self-raising flour and baking powder. If using, add the cinnamon. Mix until just combined.

Scoop into the Muffin Tin:

Divide the batter evenly among the muffin cups, filling each about ¾ full.

Bake:

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and Enjoy:

Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
