When it comes to baking, we love a one-bowl mix and bake cake. This carrot & almond loaf is not only super simple to make, but it tastes fantastic and looks great too. You only need a small amount of the New Gem Sugar Stevia Blend to sweeten this carrot loaf and the velvety cream cheese topping will have you reaching for seconds.

Equipment

  • Oven

  • Weighing scales

  • 2lb loaf tin

  • Mixing bowl

  • Wooden spoon

  • Sieve

  • Parchment paper

  • Grater

  • Peeler

  • Chopping board

  • Chopping knife

Ingredients

  • For the Loaf:

  • 115ml vegetable oil

  • 65g Gem Sugar Stevia Blend

  • 2 medium eggs

  • 60g natural yoghurt

  • Dash vanilla essence

  • 140g Gem plain flour

  • 1.5 tsp cinnamon

  • 1 tsp Gem bread soda

  • 1 tsp Gem baking powder

  • Pinch salt

  • 180g grated carrot

  • 60g Gem whole almonds, chopped

  • Topping:

  • 120g full-fat cream cheese

  • ½ tbsp maple syrup

  • 1 tsp Gem Sugar Stevia Blend

  • Gem whole almonds, chopped

  • Peeled raw carrot

  • Fresh mint

Instructions

Preheat oven to 180C/160C fan.

In a bowl whisk the oil, stevia, eggs, vanilla, and yoghurt.

Sieve in the flour, bicarbonate of soda, baking powder, cinnamon, and salt. Mix.

Add in the chopped almonds and grated carrot. Mix

Spoon into a lined 2lb loaf tin and bake for 45-50mins.

Once baked, remove and cool.

To make the topping, simply mix the cream cheese, maple syrup & stevia.

Spread this over the cooled loaf and top with carrot shavings, almonds & fresh mint.
