Equipment

  • Oven

  • Weighing Scales

  • 2 x 8” round baking tins

  • Mixing bowls

  • Whisk

  • Scissors

  • Spatula

  • Pallet knife

  • Baking tray

  • Stand or hand mixer

Ingredients

  • Chocolate Sponges:

  • 225g Gem plain flour

  • 350g Gem caster sugar

  • 85g cocoa powder

  • 1 ½ tsp Gem baking powder

  • 1 ½ tsp Gem bread soda

  • 2 medium eggs

  • 250ml milk

  • 125ml vegetable oil

  • 1 teaspoon vanilla extract

  • 250ml boiling water

  • Chocolate Royal Icing:

  • 2 x bags of Gem Instant Royal Icing

  • 115ml water

  • 30g unsweetened cocoa powder

  • 2 tbsp strawberry jam

  • 5 strawberries, sliced

  • Dipped Strawberries:

  • 10 fresh strawberries

  • 200g Gem white chocolate

Instructions

Preheat your oven to 180C/160C Fan.

Grease and line the base and sides of two 8” round tins.

For the sponges, into a bowl, add all the ingredients except the boiling water and mix.

Once combined, carefully add the boiling water and mix until everything is lump-free.

Pour this batter into the tins and bake in your preheated oven for 35-40 minutes.

Once baked allow to cool in the tin before removing. Chill until needed.

For the dipped strawberries, melt the white chocolate and dip in the berries, place on a lined tray, and chill.

To make the royal icing, add the water, royal icing, and cocoa into a bowl of a stand mixer and beat for 6-8 minutes until soft and creamy.

To assemble, sandwich the chilled sponges with a spoon of the icing, jam, and sliced berries.

Cover the outside of the cake with the icing, allowing the icing to firm up.

Finally, top the cake with the dipped strawberries and serve!
