Equipment

  • Mixing bowls (one heatproof for melting chocolate)

  • Small saucepan or microwave-safe bowl

  • Wooden spoon or silicone spatula

  • Whisk

  • Measuring spoons and digital scales

  • 20cm square baking tin

  • Baking paper

  • Knife

  • Lollipop sticks or cake pop sticks

  • Tray or plate for setting marshmallows

  • Cooling rack

  • Spoon

Ingredients

  • For the Ghosts:

  • 9 large marshmallows

  • 200g GEM white chocolate chips

  • 18 Gem milk chocolate chips for eyes

  • A little melted chocolate for mouths

  • For the brownies:

  • 100g butter (plus a little extra for greasing)

  • 200g Gem caster sugar

  • 200g Gem dark chocolate chips

  • 100g Gem milk chocolate chips

  • 4 eggs

  • 60g Gem plain flour

  • 80g cocoa powder

  • 1 tsp vanilla extract

  • A pinch of salt

Instructions

Make Your Marshmallow Ghosts

1. Gently melt white chocolate in the microwave (20-second bursts) or over warm water.
2. Stick each marshmallow on a lollipop stick.
3. Dip into melted white chocolate until coated.
4. Add milk chocolate chip eyes and draw a mouth with the melted chocolate
5.Place on baking paper and chill in the fridge to set while you make brownies.

Bake the Brownies

6. Preheat oven to 180°C fan. Line the tin with baking paper.
7. In a saucepan, melt butter and milk chocolate and dark chocolate chips together; let cool slightly and add to a mixing bowl.
8. mix in sugar and vanilla.
9. Beat in eggs one at a time until glossy.
10. Fold in flour, cocoa powder, baking powder, and salt.
11. Pour into the tin and bake for 25 minutes, until set at the edges but soft in the centre.
12. Cool completely on a rack.

Assemble Your Ghost Pops

13. Cut brownies into squares.
14. Push a marshmallow ghost onto each brownie using the stick.

Notes

Drizzle extra chocolate or dust with icing sugar for a spooky finish.
