In January, we’re usually craving one of two types of food. Either a warm and filling comfort food to get us through the dreary day or something healthy after the Christmas treats. 

These wholesome, homemade chicken fillet burgers from One Yummy Mummy tick both boxes. You’ll get to enjoy a popular Irish staple, knowing it’s both nutritious and delicious for all the family.

Almond Coated Chicken Fillet Burgers

Equipment

  • Tablespoon measure

  • Teaspoon measure

  • Kitchen scissors

  • Small kitchen knife (under adult supervision)

  • Chopping board

  • Baking tray

  • 2 shallow bowls

  • 1 small bowl

  • A small whisk (or fork)

  • Baking tray

Ingredients

  • For the Fillets:

  • 4 chicken fillets

  • 2 eggs

  • 2 tablespoons milk

  • 1 teaspoon paprika

  • A pinch of salt

  • A pinch of pepper

  • 100g Gem ground almonds

  • A drizzle of rapeseed oil

  • To Serve:

  • 4 brioche buns

  • 1 head of iceberg lettuce

  • 1 tomato

  • Some gherkins

  • For the Burger Sauce:

  • 2 tablespoons mayonnaise

  • 2 tablespoons ketchup

  • 1 teaspoon Dijon mustard

  • A little juice from the gherkin jar

Instructions

Preheat the oven to 200c /180c fan/gas mark 4.

Whisk the egg and milk together in a shallow bowl. If you don’t have a whisk, you could use a fork instead.

Combine the gem ground almonds, paprika and seasoning in a second shallow bowl.

Dip a chicken fillet into the egg mixture, making sure all parts are covered. Shake off any excess.

Transfer the fillet to the ground almonds and coat generously, again covering all parts. Set aside and repeat the process for the remaining fillets.

Wash your hands thoroughly after handling the chicken.

Oven bake the fillets for 25 to 30 minutes until the chicken is white and cooked through.

Meanwhile, wash the lettuce and tomato.

Use kitchen scissors to cut the lettuce.

Use a kitchen knife to slice the tomato. In our Family Cooking Club classes, we teach the “bridge” method. This helps to keep fingers clear of the knife.

In a small bowl, mix together the ingredients for the burger sauce.
