Sweet and gently spiced, these Cinnamon Sultana Muffins are baked with our plump Gem Gourmet Sultanas for a lovely burst of natural sweetness in every bite. Made with wholesome oats and a dash of cinnamon, they’re quick to make and perfect for school lunchboxes, a mid-morning cuppa, or a handy on-the-go breakfast. Ready in just 30 minutes – proper home-baked goodness the whole family will enjoy!

Equipment

  • 2-hole muffin tin with muffin cases

  • food processor

  • medium bowl

  • whisk

  • oven

Ingredients

  • 100g porridge oats, plus extra to decorate

  • 200ml milk

  • 2 eggs

  • 150g Gem soft brown sugar

  • 100g Gem plain flour

  • 100g wholemeal flour

  • 1 tsp Gem baking powder

  • 1 tsp Gem bread soda

  • 150g Gem Gourmet sultanas

  • 1 tbsp ground cinnamon

Instructions

Preheat the oven to 190˚C/170˚C fan/gas mark 5. Line a 12-hole muffin tin with muffin cases.

In a food processor, blend the porridge oats to form a coarse flour. Add the porridge to a bowl and pour on the milk.

In a bowl, whisk together the eggs and brown sugar. Stir into the porridge mix.

Add the remaining ingredients and stir until just combined.

Spoon the mix into the prepared muffin tray. Sprinkle with some porridge oats.

Bake for 15-20 minutes or until the tops feel springy to the touch. Allow to cool.

Notes

These muffins are perfect for lunch boxes or on-the-go breakfasts.
