Equipment

  • 9 x 13-inch rectangular cake tin

  • Weighing scales

  • Baking parchment

  • Large mixing bowl

  • Electric mixer or hand whisk

  • Sieve

  • Spatula or wooden spoon

  • Measuring spoons

  • Skewer

  • Wire cooling rack

  • Small bowl

  • Spoon or fork

  • Parchment paper

Ingredients

  • For the tart cake:

  • 200g butter, softened

  • 200g GEM caster sugar

  • 4 large eggs

  • 200g GEM self-raising flour

  • 1 tsp GEM baking powder

  • 100ml milk

  • 1 tsp vanilla extract (optional)

  • For the mud chocolate frosting:

  • 100g unsalted butter, softened

  • 200g GEM icing sugar, sifted

  • 100g GEM milk chocolate chips

  • For the grass:

  • 100g GEM desiccated coconut

  • 2 tsp green food colouring

  • For decorating your garden:

  • Strawberry Ladybirds: Halved strawberries, GEM chocolate chips (for spots), blueberries (for heads)

  • Blueberry Caterpillars: Rows of blueberries on cocktail sticks

  • Pretzel Butterflies: Pretzels stuck together with melted GEM chocolate chips

  • Fresh mint leaves (for garden greenery!)

Instructions

Prepare the Cake Tin

1. Preheat your oven to 180°C (fan).
2. Grease your cake tin and line the base with baking parchment.

Make the Cake Batter

3. In a large bowl, cream the softened butter and GEM caster sugar with an electric mixer or hand whisk until light and fluffy.
4. Add the eggs one at a time, mixing well after each.
5. Sift in the GEM self-raising flour and GEM baking powder, then gently fold in using a spatula or wooden spoon.
6. Add the milk and vanilla (if using) and mix until smooth.

Bake the Cake

7. Pour the batter into the tin and level the top.
8. Bake for 25–30 minutes, or until golden and a skewer comes out clean.
9. Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Make the Chocolate Frosting (“Mud”)

10. Time to Decorate! In a bowl, beat the softened butter until creamy.
11. Gradually add the sifted GEM icing sugar, mixing well.
12. Melt the GEM chocolate chips by placing the pack in hot water.
13. Squeeze about 1 tablespoon of melted chocolate into the frosting to give it a rich brown “mud” look. Save the rest for decorating your bugs!

Make Your Edible Grass

14. Mix desiccated coconut with green food colouring in a bowl until it looks like grass.

Decorate Your Garden!

15. Once the cake is fully cooled, spread the chocolate “mud” frosting over the top.
16. Sprinkle on the coconut grass.

17. Now get creative with your garden creatures:
● Strawberry Ladybirds: Halve strawberries, dot on chocolate chip spots, and use a blueberry for the head.
● Blueberry Caterpillars: Line up blueberries on cocktail sticks and use icing to add tiny eyes.
● Pretzel Butterflies: Stick pretzels together with melted chocolate to create whimsical wings.
● Add some fresh mint for a leafy finishing touch!
