Ingredients

  • For the cake:

  • 200g butter, softened 🧈

  • 200g Gem caster sugar 🍬

  • 4 large eggs 🥚

  • 200g GEM self-raising flour 🌾

  • 1 tsp GEM baking powder 🥄

  • 100ml milk 🥛

  • 1 tsp vanilla extract (optional) 🌸

  • For the chocolate frosting (mud):

  • 200g unsalted butter, softened 🧈

  • 400g GEM icing sugar, sifted 🍬

  • 50g cocoa powder 🍫

  • 2-3 tbsp milk 🥛

  • For the decoration:

  • 10-12 oval-shaped biscuits 🍪

  • 100g GEM dark or milk chocolate chips 🍫

  • White icing pen for writing "RIP" 🖋️

  • 100g GEM Gourmet raisins (for "mud") 🧙‍♂️

  • 2-3 tbsp GEM desiccated coconut (for texture) 🌴

Preheat the Oven 🕸️

Preheat your oven to 180 FanGrease and line a 9 x 13-inch rectangular cake tin with baking parchment.

Decorate the Biscuits (Headstones) 👻

Dip each oval biscuit into GEM melted chocolate chips, coating them completely. Place the biscuits on parchment paper and allow the chocolate to set.

Make the Cake Batter 🎃

In a large bowl, Mix together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Sift the flour, baking powder, into the bowl and gently fold into the mixture. Stir in the milk and vanilla extract until smooth and well-combined.

Pour the batter into the prepared tin and spread it evenly. Bake for 25-30 minutes, or until a skewer inserted into the centre comes out clean. Let the cake cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Prepare the Chocolate Frosting 🍫

In a bowl, beat the butter until creamy. Gradually add the sifted icing sugar and cocoa powder, beating until smooth and fluffy. Add milk, one tablespoon at a time, until the frosting reaches a spreadable consistency.

Once the chocolate on the biscuits is set, use a white icing pen to write "RIP" or other spooky messages on each biscuit.
