I love when two really tasty worlds collide and this hot whiskey Irish tea loaf is the perfect marriage. The combination of the whiskey soaked gem fruits, lemon and cloves is guaranteed to having you reaching for a second, possibly third slice.

  • 2lb loaf tin

  • large bowl

  • cooling rack

Soak the tea bags in the boiling water for 5 minutes.

Squeeze and remove the bags, pour this and the whiskey over the dried fruit and leave to soak for a minimum of 6 hours or preferably overnight.

The following day, preheat your oven to 180C/160C fan. 4. Grease and dust a 2lb loaf tin and set aside.

Place the soaked fruit and the remaining soaking liquid into a large bowl.

Add the eggs, lemon zest, flour, spices and sugar and mix together.

Spoon this batter into the prepared tin and place in the oven and bake for 1 hour and 20 minutes or until a knife inserted comes out clean.

Remove and allow to cool in the tin for 5 minutes before demoulding.

Allow to cool completely before slicing.
