For the toffee sauce, place the brown sugar, treacle, butter, salt and the cream into a saucepan.

Place this over a low/medium heat and stir until the ingredients are combined, turn up the heat slightly, simmer and stir for 3-4 minutes and set aside.

To make the date puree for the pancakes, place the chopped dates, water and soda into a saucepan and place over a low/medium heat and cook for 2-3 minutes until the dates break down and you have a soft pulp. Set aside to cool.

For the pancake batter, place the milk, eggs, vanilla, melted butter and brown sugar into a bowl and whisk together.

On top of this sieve in the flour & mixed spice. Stir until combined.

Add in the cooled date puree and mix through.

Place a pan over a medium heat, add some oil and spoon on the pancake batter.

Depending on the size of your pan you will fit 2-4 pancakes at a time.

Cook for approximately one minute on each side.

Drizzle sauce over the pancakes and serve with whipped cream and chopped walnuts.
