Equipment

  • Weighing scales

  • Mixing bowls

  • Sieve

  • Wooden spoon

  • Deep fat fryer/heavy based saucepan

  • Whisk

Ingredients

  • Doughnuts:

  • 180g Gem plain flour

  • 2 tsp Gem baking powder

  • Pinch salt

  • 120ml buttermilk

  • 40g Gem sugar stevia blend

  • 40ml butter, melted

  • Vegetable oil for frying

  • Coating:

  • 55g Gem sugar stevia blend

  • ½ tsp ground cinnamon

  • Raspberry Sauce:

  • 150 g frozen raspberries

  • 120g Gem sugar stevia blend

  • ½ lemon juice

Instructions

Place the vegetable oil into a fryer or a heavy-based saucepan and heat to 180°C.

Into a bowl, sieve in the flour, salt, and baking powder.

Add the sugar stevia blend and mix to combine.

Melt the butter and add it to the buttermilk.

Pour this into the flour mixture and mix to form a dough.

Flour your hands and divide the mix into 20 and roll into balls.

Carefully drop the mini doughnuts into the hot oil and cook for 1 minute on each side or until golden all over.

Remove and place on a tray with kitchen paper to absorb the extra oil.

For the coating, mix the sugar stevia blend with cinnamon, and toss the warm doughnuts in this and set aside.

For the dipping sauce, add the frozen raspberries, sugar stevia blend, and lemon juice to a bowl and microwave for 3-4 minutes until the sugar is dissolved and everything is hot.

Strain through a sieve and set aside until needed.

If you prefer a thicker sauce, you can add the raspberry sauce to a saucepan and bring it to a simmer, then add some dissolved cornflour to thicken it further.
