No-Bake Chocolate Salami

Equipment

  • Weighing scales

  • Saucepan

  • Mixing bowls

  • Spatula

  • Pastry brush

  • Microwave

  • Chopping board

  • Small knife

  • Clingfilm

  • Kitchen string

  • Scissors

Ingredients

  • 390g digestive biscuits

  • 60g Gem Gourmet Raisins

  • 60g Gem Golden Marzipan, diced

  • 350g Gem dark chocolate

  • 240ml cream

  • 60g butter, melted

Instructions

Place the biscuits into a bowl and with a rolling pin, break them into bitesize pieces.

To this add the diced marzipan pieces and raisins. Set aside.

In a separate bowl add the chocolate and melt over a pot of simmering water.

Once melted, remove from the heat and pour in the cream.

Mix well to combine.

To this, add the melted butter and again, mix to combine.

Spoon this chocolate mixture over the biscuits and mix to coat everything.

Layer 3 lengths of cling film on your counter, spoon the biscuit mixture onto it and roll it up like a sausage to create a tight chocolate log.

Chill for two hours.

To serve, remove from the fridge and discard the clingfilm.

With a pastry brush, dust the chocolate log with some icing sugar and tie some kitchen string around the biscuits cake to resemble a salami.

Slice & serve.
