Christmas Sugar Cookies

Equipment

  • large mixing bowls

  • rolling pin

  • cooling rack

  • stand or hand mixer

Ingredients

  • For the Biscuits:

  • 125g Gem Granulated Sugar

  • 125g Softened Butter

  • 1 Egg

  • 1 tsp Vanilla Extract

  • 250g Gem Plain Flour, plus extra for dusting.

  • For the Icing:

  • 1 Pack Gem Instant Royal Icing

  • 60ml Warm Water

  • Gel Based Food Colouring

Cream together the butter and sugar in a mixing bowl until pale and fluffy. Beat in an egg and add the vanilla. When combined, add in the flour and mix until a loose dough has formed.

Lightly flour a work surface and roll the dough out. Gently knead until the dough is smooth. Shape into a ball and wrap in cling film. Chill for 3 hours in the fridge.

Preheat oven to 170°C Fan.

After the 3 hours is up, on a floured surface roll the dough out until about half a centimeter thick. Cut the biscuit out to the desired shape using a cutter or a stencil of cardboard.

Bake for 10 - 12 minutes or until lightly golden brown. Fully cool on a wire rack.

While the biscuits are cooling, place 60ml of warm water into a mixing bowl or the bowl of a stand mixer. Add in a pack of Gem Instant Royal Icing. Start mixing on low and gradually turn it up to high. Mix for 5 - 6 minutes or until stiff peaks form.

Split icing out to the number of different colours you intend to use. For the Christmas trees, you will need about 80% green, 10% white, 5% red, 5% yellow.

Start by creating a border with green icing then fill in the rest of the cookies with the icing. Allow that to set and pipe the white across, then the red baubles and finish it off with a yellow star on top. Allow cooling!

Notes
