Equipment

  • large bowl

  • 12-case muffin tin

  • wire rack

  • small saucepan

Ingredients

  • For Mincemeat:

  • 3 Sheets of Filo Pastry

  • 100g Melted Butter

  • 300g Gem Christmas Cake Fruit Mix

  • 1 Grated Apple

  • 20g Gem Gourmet Diced Apricots

  • 15g Gem Flaked Almonds

  • 100g Gem Soft Dark Brown Sugar

  • 1 Tsp Mixed Spice

  • 1/2 Tsp Cinnamon

  • For The Custard:

  • 2 tbsp Gem Custard Powder

  • 1 tbsp Gem Caster Sugar

  • 1 Pint Milk

The night before mix all of the parcel filling ingredients together and allow to sit overnight.

Preheat your oven to 200°C / 180°C Fan.

Cut each sheet of filo pastry into 8 x 4.5" squares giving you 24 squares in total. Using the melted butter, brush a square and place another on top. Brush this second square with butter too.

Place these buttered squares into a muffin tin cup and repeat until you have 12 filled.

Spoon in some of the spiced fruit mix and pinch the top of the pastry to create a small parcel.

Bake for 10 - 12 minutes or until golden brown all over.

Remove from the tins and cool on a wire rack.

For the custard, blend the custard powder and sugar in a saucepan. Mix with milk and gently heat. Stir until it begins to thicken and pour the desired amount over a parcel when serving.
