Equipment

  • Weighing scales

  • Teaspoon measurement

  • Mixing bowl

  • Wooden spoon

  • Sieve

  • Rolling pin

  • Tools to use with icing (e.g. butter knife, cocktail sticks etc.)

  • 12-hole bun tin

  • 12 bun cases

  • Wire cooling rack

Ingredients

  • For the Cupcakes:

  • 180 g Gem plain flour

  • 1 teaspoon Gem baking powder

  • 150g Gem caster sugar

  • 150g butter

  • 3 eggs

  • 1 tsp vanilla essence

  • To Decorate:

  • 350g Gem royal icing

  • Edible googly eyes

  • Jellies

  • Food colouring

  • Coloured instant ready-rolled fondant icing

  • Gem white choc chips

Instructions

Preheat the oven to 160c / 180c fan/gas mark 4.

Place a bun case in each section of the bun tin.

Using a wooden spoon, beat the butter and sugar together in a bowl until the mixture looks light and fluffy.

Add the eggs one at a time, mixing gently.

Sift in the flour and mix gently until everything is combined.

Divide the mixture between the bun cases.

Bake for 20 minutes.

Meanwhile, prepare the icing according to the packet instructions.

Use the icing to create a set of spooky Halloween faces.

When the buns are lightly golden, leave them to cool on a wire rack.

Once cool, top each one with a spooky face. Finish off with jellies, choc chips, edible eyes, etc.
