Equipment

  • Mixing bowl

  • Whisk

  • Ladel

  • Scales

Ingredients

  • 230g Gem plain flour

  • 1 tbsp Gem caster sugar

  • ¼ tsp salt

  • 3 eggs

  • 500ml milk

  • 2 tbsp butter, melted

  • 1 tbsp vanilla extract (optional)

  • Gem icing sugar to decorate

  • Lemon juice and butter to serve

Instructions

Place the flour, sugar and salt into a large mixing bowl.

Add the eggs and whisk until combined.

Gradually pour in the milk, whisking continuously, until a smooth, lump-free batter forms.

Whisk in the melted butter and vanilla extract (if using).

If you can, allow the better to rest for 10 minutes for best results.

Heat a lightly buttered crêpe pan or non-stick frying pan over medium-high heat.

Pour a small ladle of batter into the pan, immediately tilting and rotating it to spread the batter into a thin, even layer.

Cook for 1–2 minutes until lightly golden, then flip and cook for a further 1 minute.

Serve hot with a brush of butter and a squeeze of lemon juice.

Dust with icing sugar and enjoy!
