Every great cheese board deserves equally great crackers! These parmesan & raisin crackers add a sweet & salty flavour to your cheeseboard. The board can be assembled up to four hours ahead of time. Keep loosely covered in the fridge and remove from the fridge 30-60 minutes before serving, simply add your crackers and enjoy!

Equipment

  • Weighing scales

  • Oven

  • Baking trays

  • Parchment paper

  • Food processor

  • Rolling pin

  • 2.5” round cutter

Ingredients

  • 180g Gem plain flour

  • Pinch salt

  • Pinch Gem caster sugar

  • 115g parmesan cheese, grated

  • 55g butter, cold & diced

  • ¼ tsp cracked black pepper

  • 80ml cold water

  • 40g Gem Gourmet raisins, chopped

Instructions

Preheat your oven to 180C/160C fan.

Line two baking trays with parchment and set aside.

Into a food processor, add the plain flour, salt, sugar, finely grated parmesan, black pepper & butter.

Pulse a few times until you reach a breadcrumb consistency.

To this, add enough of the cold water to form a soft dough.

Turn out on to a lightly floured work surface and add the chopped raisins.

Knead to combine.

Roll the dough as thin as possible (1/3cm thick) and using a 2.5” round cutter, cut out 30-35 biscuits.

Place on the prepared trays and into the oven and bake for 10-15 minutes or until golden brown.

Remove and allow to cool before serving with your festive cheese board.
