Vanilla-Coconut Ice Cream with Chocolate Chips

  • square tin or container for freezing

To make the ice cream, add the double cream, coconut milk and vanilla essence to a medium saucepan. Place the pan over medium heat and slowly simmer for 5 few minutes.

In a large bowl, whisk together egg yolks and Gem sugar until pale and creamy. While continuously whisking the eggs, slowly pour in the coconut-cream mixture.

Pour the egg-cream mixture back into the saucepan and place over a low heat. Keep stirring continuously for 5 minutes.

Add in the Gem desiccated coconut and cook it for another 5 minutes or until cream thickens. When it reaches its boiling point, remove saucepan from the heat and pour custard into a medium, shallow bowl. Lay cling film on the surface of the cream to prevent a skin layer to form.

Once chilled, remove cling film and stir in the chopped Gem dark choc chips. Transfer cream to a square tin or container and freeze for about an hour or until the ice cream is just about set.

Take it out from the freezer and stir it again to break the ice crystals then put it back in the freezer for another 2-3 hours or until serving.

Notes

Serve the ice cream in small bowls with some chopped mint and extra coconut sprinkled on top or just scoop ice cream into waffle cones, add more choc chips on top.
