“Many moons ago when I lived in Canada, I worked in a confectionery shop that specialised in making hand paddled fudge. I lost count of the amount I made but I will never forget that sweet buttery smell. While working there and over the years, I have tried out countless fudge recipes but I keep coming back to this one. It’s super simple to make and I never tire of the creamy fudge texture paired with walnut and raisins, its truly beautiful. Don’t take my word for it, try it yourselves.”

Walnut & Raisin Fudge

Equipment

  • 8” square baking tin, lined

  • heavy based saucepan

  • sugar thermometer

  • wooden spoon

Ingredients

Line an 8” square baking tin with parchment paper, set aside.

Into a heavy-based saucepan, add 200g of the Gem caster sugar and the water.

Place this over a medium heat and allow it to come to a caramel colour.

To this carefully add the remaining 400g caster sugar, cream, vanilla, salt and butter.

Stir this through and allow everything to combine.

Using a sugar thermometer, bring this to 120C, stirring occasionally.

Remove from the heat and with a wooden spoon, stir for a few minutes until the mixture begins to thicken but is still pourable.

Add the Gem Gourmet Raisins and Walnuts and stir through.

Spoon this into the prepared tin and allow to firm up in a cool place for a minimum of 2 hours.

Notes

If you fancy making an adult fudge, soak the Gem raisins in some dark rum beforehand. Rum raisin walnut fudge is a gorgeous combination.
