These delicious crumble bars are a fun, hands-on bake for the whole family perfect for getting children involved in the kitchen. This recipe introduces key baking skills such as measuring ingredients, rubbing butter into our gorgeous Gem Plain flour, mixing, and layering. It’s a simple and enjoyable way to build confidence while working together.

The finished bars are perfect for picnics, lunchboxes, or as a cosy homemade treat to share with family and friends. They’re also a wonderful (and delicious!) way to introduce rhubarb.

Ingredients

  • For the base & crumble::

  • 250g Gem Plain Flour

  • 1 tsp Gem Baking Powder

  • 150g rolled oats

  • 150g Gem Granulated Sugar

  • 200g cold butter, cubed

  • 1 tsp cinnamon (optional)

  • For the filling:

  • 2 medium apples, peeled and diced

  • 300g rhubarb, chopped into 2–3 cm pieces

  • 120g Gem Granulated Sugar (adjust to taste)

  • 1 tbsp Gem Cornflour

  • 1 tsp vanilla essence

Instructions

Prepare the oven and tin

Preheat the oven to 180°C (fan). Line a 30 x 20 x 5cm baking tin.

Make the filling

In a bowl, combine the apples, rhubarb, Gem Granulated Sugar, Gem Cornflour, and vanilla essence. Mix well and set aside for 10 minutes to allow the juices to develop.

Make the crumble mixture

Rub the butter into the Gem Plain Flour and Gem Baking Powder using your fingertips until the mixture resembles breadcrumbs. Stir in the sugar and cinnamon.

Form the base

Press two-thirds of the crumble mixture firmly into the lined tin to create an even base.

Assemble

Spread the fruit filling evenly over the base. Mix the rolled oats into the remaining crumble mixture, then sprinkle evenly over the top.

Bake

Bake for 40–50 minutes, or until golden and bubbling.

Cool and slice

Allow to cool completely in the tin to help the bars set. Slice into squares or bars to serve.
