As entertaining season is just around the corner, these beautiful little date & walnut pinwheel cookies are the perfect festive biscuit. Gift them to a friend, bring them to the office or simply serve them with a coffee, mulled wine or as an after-dinner sweet treat.

Ingredients

  • Biscuit dough:

  • 125g butter

  • 125g Gem icing sugar

  • 1 medium egg

  • Dash vanilla essence

  • 220g Gem plain flour

  • 30g Gem cornflour

  • Date filling:

  • 225g Gem Gourmet Dates

  • 150ml water

  • ½ tsp Gem bread soda

  • 60g Gem caster sugar

  • ½ tsp mixed spice

  • 35g Gem chopped walnuts (optional)

Instructions

For the biscuit dough, add the butter, sugar and vanilla to a bowl and mix until well blended.

To this add the egg and mix well.

Add the plain flour and cornflour, mix to form a soft dough.

Wrap and chill for 30 minutes.

For the date filling, to a saucepan add the dates, water, sugar, spice and bread soda.

Cook over a medium heat for 5-8 minutes or until the dates have cooked to a soft puree consistency. Chill.

Once the pastry has rested, on a floured surface, roll into a rectangle ½cm in thickness.

Spread on the chilled date puree and sprinkle on the chopped walnuts.

From the long side, roll up like a Swiss Roll and chill for 10 minutes.

Preheat the oven to 180C/160C fan.

Slice the chilled biscuit roll into 30 pieces and place 15 on each tray.

Bake in the preheated oven for 12-15 minutes or until lightly golden brown.

Once baked, remove and allow to cool before serving.
