  • 13” x 9” baking tray

  • Sieve

  • Spatula

  • Baking parchment

Ingredients

  • Chocolate sponge:

  • 3 large eggs

  • 40g Gem caster sugar

  • 40g Gem light muscovado sugar

  • 60g Gem plain flour

  • 20g unsweetened cocoa powder

  • 1 teaspoon Gem baking powder

  • 1 teaspoon vanilla extract

  • Chocolate buttercream:

  • 250ml cream

  • 1 tbsp Gem icing sugar

  • Dash vanilla

  • 2 clementine zest

  • Icing:

  • 430g Gem Royal icing

  • 30g unsweetened cocoa powder

  • 80ml water

Instructions

Preheat the oven to 180C and grease and line a 9” x 13” Swiss roll tin with parchment.

Whisk the eggs, vanilla and sugar until pale in colour.

Sieve the flour, cocoa and baking powder & carefully fold into the mix.

Spoon into the tin, spread out and bake for 8-10 minutes.

Once baked, turn it out onto a sugared sheet of parchment paper.

From the long side, roll the paper up inside the sponge and allow it to cool completely.

For the filling, whisk the cream, icing sugar & orange zest until thick, keep cold until needed.

Unroll the cooled sponge and spread on the cream and reroll.

To make the icing, add the royal icing, cocoa and water to a stand mixer and whisk to combine, turn up the speed and mix on full speed for 6-8 minutes until thick and glossy.

Cover the Swiss roll with the icing and use a fork to make the designs along the sides to resemble a wooden log.
