Equipment

  • 1 litre microwave-safe dish

Ingredients

  • For the base:

  • 4 tbsp lemon curd

  • 100g soft butter

  • 100g Gem Caster Sugar

  • 100g Gem Self-Raising Flour

  • 1 tbsp milk

  • 2 large eggs

  • 1 Zest of lemon

  • For the icing:

  • 30g Gem Icing Sugar

  • 1-2 tsp lemon juice

1. Grease a one-litre microwave-safe dish with butter. Place the lemon curd in the base.

2. Beat together the butter, sugar, self-raising flour, milk, eggs and lemon zest then spoon the mixture over the curd.

3. Microwave, uncovered, for 3 1⁄2 - 4 minutes until risen and cooked through. Leave to cool slightly.

4. In a bowl, combine the icing sugar and lemon juice to make a runny icing. Drizzle over the sponge before serving.

How to make homemade lemon curd?

1. In a pan, whisk together 2 whole eggs, 2 egg yolks and 165g Gem caster sugar until smooth.
2. Place the pan over a low heat. Add the 80g chilled butter, juice and zest of 2 lemons and cook, whisking continuously, for 3-4 minutes until thickened.
3. Strain through a sieve into a sterilised jar and keep, covered, in the fridge for up to two weeks.
