Blackberries are bursting from the hedges all over Ireland right now, and they taste absolutely gorgeous in these Blackberry & Oat Muffins. They’re every bit as delicious as blueberry muffins, possibly even better! The Gem dark brown sugar gives them a gorgeous hint of caramel and helps keep them beautifully soft and moist.

Fruity, fluffy and honestly good enough for any coffee-shop counter, they’re perfect for a quick breakfast, an after-school snack or a little homemade treat tucked into a lunchbox. They’re also the perfect bake to make with the whole family, so gather everyone into the kitchen and let’s get baking together!

They’re absolutely gorgeous served slightly warm, but they’re just as lovely popped into a lunchbox the following day if there are any left!

Equipment

  • 12-hole bun or muffin tray

  • 12 paper bun cases

  • Large mixing bowl

  • Medium mixing bowl or jug

  • Weighing scales

  • Measuring jug

  • Measuring spoons

  • Whisk or fork

  • Wooden spoon or spatula

  • Tablespoon or ice-cream scoop

  • Wire cooling rack

Ingredients

  • 200g self-raising flour

  • 50g porridge oats, plus a little extra for topping

  • 75g Gem dark brown sugar

  • 1 tsp Gem baking powder

  • ½ tsp ground cinnamon

  • Pinch of salt

  • 2 medium eggs

  • 120g natural yoghurt

  • 60ml sunflower or vegetable oil

  • 1 tsp vanilla extract

  • 120g fresh blackberries

Instructions

Preheat your oven to 180°C fan and line a 12-hole bun or muffin tray with paper cases.

Add the Gem self-raising flour, porridge oats, Gem dark brown sugar, Gem baking powder, cinnamon and salt to a large mixing bowl. Give everything a good stir.

In a separate bowl or jug, whisk together the eggs, natural yoghurt, oil and vanilla extract.

Pour the wet mixture into the dry ingredients. Gently fold everything together until it is just combined and try not to overmix it.

Add the blackberries and gently fold them through the mixture. Don’t worry if a few of them break up; those lovely little blackberry ripples make the muffins even more delicious!

Divide the mixture evenly between the 12 paper cases, filling each one approximately two-thirds full. An ice-cream scoop is brilliant for this and makes the job much less messy.

Finish each muffin with a little piece of blackberry and a sprinkle of porridge oats.

Bake for 18–22 minutes, until the muffins are golden, well risen and a skewer inserted into the centre comes out clean.

Allow them to cool in the tray for 5 minutes before transferring them to a wire rack.
