Equipment

  • 8 inch bundt tin

  • electric or handheld mixer

  • large bowl

Ingredients

  • For the cake:

  • 75g Gem caster sugar

  • 75g Gem soft light brown sugar

  • 180g butter

  • 2 eggs beaten

  • 1tsp vanilla essence

  • 220g Gem plain flour

  • ½ tsp cinnamon

  • 1 tsp Gem baking powder

  • 30ml milk

  • Zest of 1 orange

  • 50g Gem milk chocolate chips

  • 50g GEM Sultanas, raisings, mixed fruit or Christmas cake mix

  • For the glaze:

  • 200g Gem icing sugar

  • 20ml water

Heat the oven to 180C/160C fan/gas 4.

Thoroughly brush a 1.5 litre bundt tin with melted butter.

Beat the butter and sugars together with an electric or handheld mixer.

Add in the eggs and the vanilla essence until combined.

Sieve in the flour, cinnamon and baking powder.

Pour in the milk and combine.

Finally, add the orange zest, chocolate chips and dried fruit and fold into the mixture.

Spoon the mixture into the prepared tin and bake for around 40-45 minutes.

Test the cake to see if a skewer inserted into the deepest part comes out clean.

The cake will take 40 - 50 mins, depending on the proportions of your bundt tin.

Allow to cool in the tin for 10 minutes before turning out.

Mix the icing sugar and water together to form a toothpaste consistency.

Once completely cool, decorate with the icing drizzle and a zest of orange on top.
