Chunky Winter Soup

Equipment

  • large bowl

  • medium pot

Ingredients

  • 100g Gem Soup Mix

  • 1 medium Potato

  • 1 medium Carrot

  • 1 Stalk of Celery

  • 1/2 Medium Onion

  • Bouquet Garni (Fresh Parsley, Thyme and Bay Leaves wrapped in string)

  • Salt and Pepper to taste

Instructions

1. Steep the soup mix in water overnight.

Dice all of the vegetables. In a medium pot, sauté the veg for 3 minutes with some oil over medium heat.

Strain and add the soup mix in with the vegetables. Cover with chicken stock or cold water. Add in your bouquet garni and salt and pepper.

Bring the soup up to a boil, cover and allow to simmer for 30 minutes until the veggies have softened.

Remove the herbs and serve with bread! Enjoy!
