Oat, Raisin & Blueberry Muffins

Equipment

  • large mixing bowls

  • medium bowl

  • muffin tray lined with cases

  • cooling rack

Ingredients

  • 230ml Milk

  • 80g Oats plus extra for sprinkling

  • 160g Gem Plain Flour

  • 1 tsp Gem Baking Powder

  • 1/2 tsp Gem Bread Soda

  • 1 tsp Ground Cinnamon

  • A pinch of Salt

  • 120g Butter, melted and cooled

  • 120ml Honey

  • 1 Egg

  • 1 tsp Vanilla Extract

  • 120g Blueberries

  • 50g Raisins

  • Soft Dark Brown Sugar for sprinkling (optional)

Instructions

Soak the oats in the milk for 20 minutes to let them puff up. Let them steep for about 20 minutes.

Preheat the oven to 220C. Line a 12-muffin tray with cases.

In a large mixing bowl, add the flour, baking powder, bread soda, cinnamon, and salt. Whisk until combined.

In a separate bowl, add the honey, egg, vanilla, and cooled melted butter. Mix until combined. Pour into the dry ingredients and gently mix them together. Add in the oat and milk mixture.

When the mix is all combined, fold in the raisins and blueberries. Spoon into the cases and sprinkle extra oats and brown sugar over the top.

Bake for 5 minutes, then turn the heat down to 175C and bake for another 15 minutes or until a skewer comes out clean. Leave to cool on a rack.
