While it may still feel like Summer, there’s never a wrong time to start bringing Autumn flavours into your bakes. Apple and Cinnamon Muffins are really quick to make and only use basic ingredients that would be in most cupboards!

Equipment

  • mixing bowls

  • lined 12-case muffin tray

Ingredients

  • 2 Apples (We used Granny Smith)

  • 300g Gem Plain Flour

  • 2 tsp Gem Baking Powder

  • 2 tsp Cinnamon

  • 150g Gem Soft Light Brown Sugar

  • 160ml Plain Youghrt

  • 140ml Vegetable Oil

  • 2 Eggs

  • 50ml Honey

  • Gem Flaked Almonds (optional)

  • Pinch of Gem Demerara Sugar (optional)

Instructions

Preheat your oven to 180°C Fan, 200°C Non-Fan.

Peel and core your apples. Then dice to about 1cm each way.

Mix together your flour (300g), baking powder (2 tsp), cinnamon (2 tsp) and soft light brown sugar (150g) in a bowl.

Separately, mix together yoghurt (160ml), oil (140ml), 2 eggs, and honey (50ml)

Pour your wet ingredients into your dry and fold to combine. Once it's all homogenous, add in your apples and flaked almonds if you're using them and fold them into the mix.

Line a muffin tray with paper cases and evenly spread the batter out, you will have enough to fill 12 cases to the brim. At this stage, you can sprinkle Demerara sugar over the top for added texture.

Bake in the middle of the oven for 20 - 25 mins or until a skewer inserted into the muffins comes out clean.

Cool on a wire rack and enjoy once cooled!
