Courgette Pistachio Loaf with Yoghurt Lemon Glaze

Equipment

  • Weighing Scales

  • Oven

  • 1 x 2lb loaf tin

  • Parchment paper

  • Mixing bowl

  • Spatula

  • Whisk

  • Grater

  • Chopping board

  • Chopping knife

  • Sieve

Ingredients

  • Cake:

  • 200ml vegetable oil

  • 70g pistachios, chopped

  • 200g Gem Organic Sugar

  • 3 medium eggs

  • 70g natural yoghurt

  • Dash vanilla extract

  • 200g Gem self-raising flour

  • 200g grated courgette

  • ½ lemon, zest

  • Icing:

  • 60g butter, soft

  • 40g Gem icing sugar

  • 160g full fat cream cheese

  • ½ lemon zest

  • Chopped pistachios to garnish

Instructions

Preheat your oven to 160°C/140°C fan.

Grease and line a 2lb loaf tin with a paper liner.

In a large bowl whisk oil, sugar, eggs, yogurt and vanilla, until combined.

Sieve in the flour and add in the grated courgette, lemon zest and chopped pistachios.

Mix and spoon into the tin.

Bake for 90 minutes or until a skewer inserted comes out clean.

Cool completely in tin.

For the icing, whisk the butter and icing sugar until smooth.

Add in the cream cheese and lemon zest and mix until smooth.

Spread on top of cooled loaf cake and decorate with chopped pistachios.
