Strawberry Shortcake Sandwich Cookies

Ingredients

  • Cookies:

  • 115g Butter, softened

  • 1 teaspoon vanilla extract

  • 40g Gem Cornflour

  • 80g Gem Plain Flour

  • 45g Gem Icing Sugar

  • Buttercream:

  • 100g strawberries, sifted

  • 125g butter

  • 250g Gem icing sugar

  • 2 tsp vanilla essence

Preheat oven to 160 fan 180C.

Line a baking tray with parchment paper and set aside.

In a large bowl, cream the butter and icing sugar until light and fluffy.

Add the cornflour and plain flour in 2 batches and mix until combined.

Bring to a ball roll in cling film and leave in the fridge while you make your buttercream.

Make your buttercream by mixing the butter and icing sugar, sift in the strawberries.

Once your dough is chilled, roll it out onto a floured surface.

Using a five-inch cookie cutter, cut out 20 cookies.

Transfer the cookies to the baking tray and bake for 12-15 minutes, until slightly golden. Allow to cool.

Once cooled spread a little buttercream in the center of each cookie and make it into sandwiches.

Notes

Double the batch because they will be gone in a flash!
