These soft chewy date brown sugar cookies are so unbelievably tasty. The dates add a beautiful texture and that distinctive caramel flavour.

It’s a cracking recipe to have in your back pocket as all the ingredients are cupboard staples & they’re super easy to make especially with the kids. Happy baking!

Equipment

  • sieve

  • 2 mixing bowls

  • 2 baking trays

  • parchment paper

Ingredients

Instructions

Sieve the flour and bicarb of soda into a bowl.

Cream the butter and brown sugar for two minutes.

Add the eggs one by one and vanilla and mix.

To this add the sieved flour mix and combine.

Stir in the dates (and nuts if using) and mix.

Place this batter into a bowl and chill for 30 minutes.

Preheat your oven to 170C/150C fan and line two baking trays with parchment. Set aside.

Scoop out 14 balls of cookie dough and place on the trays. These cookies will spread so allow space.

Place in the preheated oven and bake for 10-12 minutes or until lightly golden brown.

Remove and allow to cool.

Notes

Sprinkle on some sea salt for extra flavour and texture.
