Baked Salmon & Cheese Croquettes

15 small croquettes

Equipment

  • large bowl

  • lined baking tray

Ingredients

  • 50g Gem plain flour

  • 230g mashed potatoes, chilled

  • 50g corn

  • 70g smoked salmon

  • 1 egg yolk

  • small bag of cheddar cheese, grated

  • salt & pepper to taste

Instructions

Preheat your oven to 180°C.

Mix all ingredients together. You can use some left over mashed potatoes straight out of the fridge, or prepare fresh one. Just make sure that the mash is chilled and not very creamy so the croquette balles will stick together. Add some extra flour if you find the mixture too sticky.

Make 15 balls using your wet palms and roll them into grated cheddar cheese.

Place croquette balls onto a lined baking tray and bake them for 20-25minutes or until golden brown.

Notes

Serve croquettes with tartar sauce, garlic aioli, or horseradish-dill sauce on a salad bed. Enjoy!
