It’s almost that time of year to dust off the BBQ and get ready for some al fresco dining.

If you want to mix up your burger game or simply fancy a change, you really need to try out Chef Shane Smith’s beautiful red lentil nut burgers. Loaded with lentils, veggies and nuts, these burgers are packed with flavour and are a guaranteed crowd pleaser.

  • large mixing bowl

  • food processor

  • lined baking tray

Cover the Gem lentils in cold water and cook over medium heat for 30 minutes until soft.

Cool to room temperature.

Pop the Gem walnuts and seeds (I used a mix of sunflower, pumpkin, linseed & flax) into a food processor and roughly blitz. Pop these into a large mixing bowl.

Blitz the onion, garlic and whole chilli for a few seconds to form a rough mixture. Add to the mixing bowl.

Repeat with the carrot and add to the bowl.

To this add the egg, Worcestershire sauce, breadcrumbs, tomato puree, dried herbs and mix well.

Add the cooled lentils and the flour, mix until there is no trace of flour remaining.

Place these on a lined tray and chill for 30 minutes, this will help hold their shape once cooking.

Once chilled, place a frying pan on the heat and add some oil.

Cook the burgers over medium heat for a minute or so on each side and you can then pop them into a preheated oven set at 180C for 10 minutes to cook all the way through.
