Extra light and irresistibly fluffy, these pancakes are made special by folding whipped egg whites into the batter for a cloud-like texture. Golden on the outside and tender in the middle, they’re the perfect base for a generous topping of fresh berries, softly whipped cream, and a drizzle of melted milk and white chocolate. Finished with a dusting of icing sugar, this recipe is ideal for weekend brunches, special breakfasts, or whenever you’re craving a little indulgence.

Fluffy Pancakes & Waffles with Berries and Chocolate

Equipment

  • Mixing Bowl

  • Whisk

  • Scales

  • Frying pan

Ingredients

  • 2 eggs, separated

  • 120g Gem self-raising flour

  • 1 tsp Gem baking powder

  • 120ml buttermilk

  • 1 tsp vanilla extract

  • 25g butter, melted

  • Mixed berries, to serve

  • 100ml fresh cream, whipped

  • 100g Gem milk and white chocolate chips, melted

  • 2 tbsp Gem icing sugar, to decorate

Instructions

Place the egg whites into a clean bowl and whisk with a hand whisk or electric mixer until stiff peaks form. Set aside.

In a separate large bowl, mix the egg yolks, flour, baking powder, buttermilk, vanilla extract and melted butter until smooth.

Gently fold the whisked egg whites into the batter, taking care not to knock out the air. The mixture should be thick and fluffy.

Heat a non-stick frying pan over medium heat and lightly brush with butter.

Spoon 2 tablespoons of batter per pancake into the pan.

Cook for 1–2 minutes until golden on the underside, then flip and cook for a further 1 minute.

Remove from the pan and repeat with the remaining batter.

Serve immediately with mixed berries, whipped cream and a drizzle of melted chocolate. Dust with icing sugar to finish.

Notes

This batter is also perfect for fluffy waffles. Just pour it into a waffle maker, cook for 3–4 minutes, and you’ll get crispy on the outside, fluffy on the inside waffles.
