Equipment

  • Weighing scales

  • saucepan

  • knife/ scissors

  • measuring spoons tsp/tbsp

  • wooden spoon

  • measuring jug

  • Medium sized bowl

  • Spatula

  • 8 x 12 inch or 7 x 11 inch baking tray lined with parchment paper

Ingredients

  • 125g treacle

  • 125g golden syrup

  • 125g soft butter

  • 125g Gem soft dark brown sugar

  • 250g Gem plain flour

  • 2 tsp Gem baking powder

  • 1 tsp Gem bread soda

  • 2 tbsp ginger spice

  • 1 tbsp all spice/ mixed spice or all spice

  • zest of 1 orange and one lemon

  • 2 eggs

  • 100 ml buttermilk

  • 100 gm Gem crystallised ginger, finely chopped

Instructions

Preheat oven to 180° C fan.

Add golden syrup, treacle, butter and sugar to a saucepan and melt until soft and combined.

In a bowl mix flour, baking powder, bread soda, and spices together.

Add eggs to measuring jug of buttermilk and mix well.

Add the dry mix into the saucepan. Mix well then add the egg and buttermilk mix and stir to fully combine.

Finally add the chopped ginger and stir.

Pour into the parchment lined tray and bake for 35 minutes. A skewer should come out clean.

Leave to cool in the tray then wrap in parchment and leave overnight.
