Equipment

  • Oven

  • Weighing scales

  • Mixing bowl

  • Wooden spoon

  • Sieve

  • 1 x 2lb loaf tin

  • Tin liner

  • Zester

  • Saucepan

  • Chopping board

  • Small knife

Ingredients

  • For The Sponge:

  • 175g butter, soft

  • 175g Gem caster sugar

  • 3 medium eggs

  • 175g Gem Plain flour

  • 1 lemon, zested

  • 1 tsp Gem baking powder

  • For Soaking liquid:

  • 2 lemons, juiced

  • 20g Gem caster sugar

  • 50ml elderflower cordial

  • For The Buttercream:

  • 80g butter, soft

  • 80g Gem icing sugar

  • Dash vanilla

  • Mixed berries

  • Edible flowers

  • Mint

Instructions

Preheat your oven to 180C/160C fan.

Line a 2lb loaf tin with a paper liner.

For the sponge, cream the butter and sugar until soft & creamy.

To this, gradually add the eggs, one at a time, and mix between each addition.

At this point, add the lemon zest and mix.

Sieve in the flour and baking powder.

Mix and spoon into the prepared tin.

Bake in the preheated oven for 45-50 minutes, or until golden brown all over and a skewer inserted comes out clean.

Heat all the soaking liquid ingredients in a saucepan and pour this warm syrup over the hot cake.

Allow to cool in the tin before removing.

For the buttercream, beat the butter, sugar, and vanilla together until pale and soft.

Spread this over the top of the cooled sponge and top with Summer berries, edible flowers, and mint.
