Melted Snowmen Biscuits

Equipment

  • Mixing bowl

  • Wooden spoon

  • Electric  hand whisk (for icing)

  • Rolling pin

  • Cookie cutter (round)

  • Baking tray

  • Baking paper

  • Cooling rack

  • Small spoon (for icing)

Ingredients

  • For the biscuit:

  • 160g Gem plain flour

  • 80g Gem caster sugar

  • 80g cold unsalted butter

  • 3 tbsp milk

  • 1 tsp vanilla essence

  • For the melted snowmen:

  • 1 pack Gem royal icing

  • 50ml water

  • 8 Gem chocolate chips (for buttons)

  • 8 orange sprinkles (for noses)

  • 8 strawberry laces (for scarves)

  • Black icing tube (for eyes and mouths)

  • 8 marshmallows (for heads)

Instructions

Make the biscuit dough

1. Rub the cold butter into the flour using your fingertips until it resembles breadcrumbs.
2. Add the caster sugar and mix well.
3. Pour in the milk and vanilla essence, then bring everything together to form a smooth dough.
4. Place in the fridge to chill for 15–20 minutes.

Prepare the snowman heads

5. Using the marshmallows, dot on two black icing eyes and an orange sprinkle nose.
6. Set aside to dry.

Roll & Cut

7. Roll the chilled dough to about 1.2 cm (½ inch) thick.
8. Cut out rounds using a floured cookie cutter, pressing straight down without twisting.

Bake

9. Place the biscuits on a lined baking tray.
10. Bake at 220°C for 12–15 minutes, until lightly golden.
11. Move to a cooling rack and allow to cool slightly.

Make the royal icing

12. Mix the Gem royal icing with 50ml water using an electric hand whisk until smooth and thick.

6. Decorate

13. Spoon a generous blob of icing onto each biscuit to create the melted snow effect.
14. Place a marshmallow head on top and press gently to stick.
15. Add chocolate chips as buttons and use strawberry laces as scarves.
16. Finish with any extra details using the icing tube — then enjoy!
