This Pancake Tuesday, we’re whipping up fluffy pancake sandwiches ,perfect for eating by hand when you’re on the move, just right for school lunchboxes, busy mornings, or as a sweet treat any time of day. Choose your favourite filling from classic strawberries and whipped vanilla cream to our dreamy banana and favourite spread version (you can even use our cocoa almond spread). Our recipe is a gorgeous American-style pancake, made with the finest ingredients by Gem — super fluffy, seriously moreish, and guaranteed to disappear fast

Equipment

  • Large mixing bowl

  • Whisk

  • Measuring jug

  • Kitchen scales

  • Frying pan

  • Spatula

  • Balloon whisk

  • Knife and chopping board

  • Cooling rack or plate

  • Lunchbox containers (for packing)

Ingredients

  • Pancakes:

  • 200 g Gem self-raising flour

  • 50 g Gem caster sugar

  • 1 tsp Gem baking powder

  • 130 ml milk or buttermilk

  • 2 medium eggs

  • 1 tsp vanilla extract

  • Cream Filling:

  • 240 mls single cream

  • 25 g Gem icing sugar

  • 30 g cream cheese

  • 1 tsp vanilla essence

  • Strawberry Version

  • Fresh strawberries, sliced

  • Banana & Spread Version

  • 1–2 ripe bananas, sliced

  • Your favorite spread (as needed)

Instructions

For the Cream Filling

Whip the cold cream with the Gem icing sugar until soft and fluffy.
Fold in the vanilla cream cheese until smooth and lightly tangy-sweet, and place in the fridge until needed

To make the pancakes

In a bowl, whisk together the flour, sugar, and baking powder.
Add the milk, eggs, and vanilla, then whisk until smooth and thick but pourable.
Heat a non-stick pan over medium and lightly grease it.
Pour quarter cup of batter (perfect sandwich size!) and cook for about 1–2 minutes per side until golden and fluffy.
Transfer to a plate or cooling rack and let them cool slightly.

Assemble the Strawberry Sandwiches

Spread a layer of cream filling over one pancake.
Top with sliced strawberries.
Place another pancake on top and gently press.
Slice in half if you want cute, snackable wedges.

Assemble the Banana & Favorite spread Sandwiches

Spread a thin layer of your favorite spread over one pancake. Add sliced banana.
Spoon or spread a little whipped cream on top (optional but delicious!).
Finish with another pancake and gently press.
Slice in half and serve.
