Equipment

  • Mixing bowls

  • Electric mixer or hand whisk

Ingredients

  • For the Pumpkin Loaf:

  • 125g unsalted butter (softened)

  • 50g vegetable oil

  • 150g Gem Caster Sugar

  • 2 eggs

  • 200g pumpkin purée (canned or homemade)

  • 250g Gem Self-Raising Flour

  • Pinch of salt

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • ½ tsp ground ginger

  • For the Sticky Date Topping:

  • 100g date syrup

  • 50g Gem Icing Sugar

Preheat your oven to 170°C (fan). Line a loaf pan with parchment paper.

In a large bowl, beat together the butter, oil, and Gem Caster Sugar until the mixture is pale, creamy, and fluffy.

Add the eggs one at a time, beating well after each addition.

Gently fold in the pumpkin purée until well combined.

Sprinkle in the cinnamon, nutmeg, ginger, and a pinch of salt. Then sift in the Gem Self-Raising Flour. Fold everything together gently.

Pour the batter into your lined loaf tin. Smooth the top and bake for 40 minutes, or until a skewer inserted into the centre comes out clean.

Allow the loaf to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

While the loaf cools, whisk together the date syrup and Gem Icing Sugar until smooth and pourable.

Once the loaf is fully cooled, drizzle the sticky date topping generously over the top. Slice and enjoy!
