Equipment

  • 2 mixing bowls

  • measuring cups and spoons

  • 1 Sieve

  • 1 wooden spoon

  • 1 electric hand whisk

  • 1 12 hole muffin tray OR 2lb loaf tin

  • 1 muffin paper liners

  • 1 Veg peeler

  • 1 Chopping board

  • 1 knife

  • 1 serving bowl

Ingredients

  • For the Muffins:

  • 230g GEM self-raising flour

  • 1 tsp GEM baking powder

  • 175g GEM soft light brown sugar

  • 175g unsalted butter, softened

  • 3 medium eggs

  • 1 tsp vanilla essence

  • 100g GEM Gourmet sultanas

  • 2 Bramley apples, medium, peeled and diced

  • 2 tbsp milk

  • For the Crumble Topping:

  • 75g plain flour

  • 50g oats

  • 50g GEM soft light brown sugar

  • 50g unsalted butter, cold and cubed

  • Optional: 1 tsp ground cinnamon for extra flavour

  • Vanilla Whipped Cream:

  • 250 ml whipping cream

  • 2 tsp vanilla essence

  • 50g GEM icing sugar

Mixing the Batter

1. In a large bowl, combine GEM self-raising flour, GEM baking powder, and GEM soft light brown sugar.
2. Add softened butter, crack in the eggs, vanilla essence, GEM gourmet sultanas, grated apples, and milk. Mix with an electric hand whisk until smooth.

Preparing the Crumble

1. In a separate bowl, combine plain flour, oats, soft light brown sugar, and cold cubed butter.
2. Rub together with fingers until you get a crumbly texture. Add cinnamon if desired.

Bake It Up

1. For Muffins: Divide batter into muffin cases, top with crumble, and bake for 20-25 minutes.
2. For the Loaf: Pour batter into 2lb loaf tin, sprinkle crumble on top, and bake at 180°C about 50-60 minutes.

Whip Up the Cream

1. Beat whipping cream, vanilla, and icing sugar until soft peaks form. Serve alongside the loaf or muffins.
