Equipment

  • Weighing scales

  • Oven

  • 9” x 15” Baking dish

  • Chopping board

  • Small knife

  • Mixing bowls

  • Sieve

Ingredients

  • Peach Filling:

  • 1kg fresh peaches, diced

  • 50g Gem Organic Granulated Sugar

  • 8g Gem Cornflour

  • 10ml lemon juice

  • ½ tsp ground cinnamon

  • ½ tsp ground ginger

  • Biscuit Topping:

  • 250g Gem Plain Flour

  • 100g Gem Organic Granulated Sugar

  • 115g cold butter, diced

  • 1 ½ tsp Gem Baking Powder

  • ¼ tsp Gem Bread Soda

  • 130ml buttermilk

  • Topping:

  • 1 egg for egg wash

  • 20g Gem Organic Granulated Sugar

  • 2 tbsp Gem Icing Sugar

Instructions

Preheat your oven to 180C/160C fan.

Add the diced peaches, sugar, cornflour, lemon juice and spices to a bowl and mix.

Spoon this into the baking dish and place in the preheated oven for 15 mins.

Once the time is up, remove and set aside.

To make the biscuit topping, sieve the flour and raising agents into a bowl.

Add the sugar and mix.

To this, add the butter and with your fingertips, mix until a breadcrumb consistency is reached.

Make a well in the centre and add the buttermilk.

Mix to form a soft dough.

Scoop small amounts of dough over the top of the roasted peaches to cover.

Egg-wash the dough and sprinkle with the remaining sugar.

Roast in the preheated oven for 45 minutes until golden brown all over.

Remove and allow to cool for a few minutes before dusting with icing sugar.

Serve with a scoop of vanilla ice-cream or semi whipped cream.
