If you’re more savoury than sweet then this Recipe is for you. Packed full of flavour these delicious savoury scones are a gorgeous “on the go” snack and they freeze great also. The only problem is they won’t last long as everyone will want one (or two!)

Equipment

  • Mixing Bowl

  • Jug

  • Whisk

  • Pastry brush

  • Scone cutter

  • Baking tray

Ingredients

  • 350g Gem Self Raising Flour

  • Pinch of salt

  • 80g cold butter cut into cubes

  • 100g grated cheddar – I mixed red & white

  • 1 tbsp finely chopped thyme

  • 1 egg

  • 180ml milk or buttermilk

Instructions

Pre-heat oven to 200C/180C fan/Gas.

Sieve the flour into a large bowl and add a pinch of salt, mix together.

Add the butter and use your fingers to rub through the flour until it resembles breadcrumbs.

Add the cheese and herbs and combine well. Crack an egg into the buttermilk and whisk together.

Make a well in the centre of the dry ingredients and pour half the buttermilk in, use your hand to bring wet and dry mixture together.

Pour in the remaining buttermilk mix and bring together until you have a ball of dough.

Place dough on a floured surface and roll to 1.5” thickness.

Cut scones with a scone cutter and place on a floured baking sheet.

Brush tops with egg wash or melted butter.

Place in a pre-heated oven 200C/180C fan/Gas 6 for 18-20 minutes until golden.

Once baked, place on a wire rack and cover in a clean tea towel to cool.

Notes

Serve with cream cheese and smoked salmon.
