One Yummy Mummy’s Traditional Sponge Traybake is a recipe you will come back to again and again, whether it be a birthday or a bake sale, it’s the one foolproof cake that is perfect for all occasions. We know that home cooking and baking are good for our families, but it’s better again when we (and our kids) can use those skills to help others.

On Friday 31st March, ovens around Ireland will go into overdrive to raise vital funds for the Children’s Health Foundation and the children they care for in Crumlin, Temple Street, Tallaght and Connolly hospitals. This is one of our Family’s favourite bake-together treats, with simple store cupboard ingredients, plus the only kitchen equipment you need is a mixing bowl and wooden spoon. We really hope you love it!

  • Wooden Spoon

  • Large bowl

  • Medium bowl

  • Kitchen scale

  • Sieve

  • 20 x 30cm cake tin

  • Baking paper

  • Cooling rack

Preheat your oven to 180C/160C fan/gas 4.

Grease a 20 x 30cm cake tin.

To a large mixing bowl add the butter and sugar, cream together with your wooden spoon until your mix is pale.

Add the eggs one at a time mixing each time you add.

Sift in the flour and baking powder and mix until you have a smooth batter.

Finish with 2 teaspoons of vanilla essence and give a final mix.

Spoon the batter into the prepared tin and spread to the corners.

Tap your cake tin gently on the counter to ensure the mix is level.

Bake for 40-45 mins.

Check with a skewer and if it comes out clean, your tray bake is ready.

Make your icing by sifting the icing sugar into a clean bowl.

Add just enough water to bake a thick icing.

Spread the icing onto your cake and finish with a good sprinkle of coloured sprinkles.

Leave to set and cut into squares.
