Ingredients

  • For Cake :

  • 150ml Guinness

  • 70g butter

  • 160g Gem caster sugar

  • 2.5 tbsp cocoa powder

  • 2 medium eggs

  • 3 tbsp yoghurt

  • 1 tsp vanilla extract

  • 130g Gem plain flour

  • 1 tsp Gem baking powder

  • ½ Gem bicarbonate of soda

  • pinch of salt

  • For Guinness ganache :

  • 200g Gem dark chocolate

  • 100ml cream

  • 20ml Guinness

Instructions

Preheat your oven to 180°C (160°C fan) and line a 2lb loaf tin with parchment or a paper liner.

For the cake, pop the Guinness and butter into a saucepan and gently heat while stirring until the butter has melted.

Set it aside to cool for 5 minutes.

In a mixing bowl, stir together the sugar and cocoa. Pour in the Guinness mixture and whisk until smooth and glossy.

Add the eggs, yoghurt and vanilla, then whisk again until everything comes together nicely.

Sieve in the flour, baking powder, bicarbonate of soda and salt, then fold gently until you have a soft batter.

Spoon into the prepared tin, and bake for around 45 minutes, or until the loaf has risen and a skewer inserted into the centre comes out clean.

Leave the cake to rest in the tin for 10 minutes before carefully turning it out onto a wire rack to cool completely. Remember to remove the paper liner.

For the ganache, heat the cream and Guinness and pour it over the chocolate chips and set aside for 2-3 minutes until the chocolate has melted.

Pour this over the cake and top with homemade honeycomb
