Equipment

  • mixing bowls

  • 6 serving glasses

Ingredients

  • For the Mousse:

  • 170g Gem dark chocolate drops

  • 250ml semi-whipped single cream

  • 3 medium egg yolks

  • 1 whole medium egg

  • 100g caster sugar

  • 60ml water

  • For the Truffles:

  • 60g Gem dark chocolate

  • 60ml single cream

  • 50g unsweetened cocoa powder

  • Fresh berries to garnish

Instructions

For the mousse, whip the cream and keep cold until needed.

Melt the Gem dark chocolate in a bowl set over a pot of gently simmering water, keep warm until needed.

Place the egg yolks and whole egg in a bowl and with a hand mixer or in a stand mixer, whisk for 5 minutes until thick and pale in colour.

Add the sugar and water into a saucepan and place over a medium heat until the sugar dissolves and starts to boil.

Carefully pour this hot syrup over the eggs and continue to whisk until the mixture is fully cold, thick and shiny.

To this egg mixture, add in the warm melted chocolate and with a spatula, fold through until combined.

Finally add in the whipped cream and again with the spatula, fold the cream into the chocolate mixture.

While still soft, divide the chocolate mousse between your 6 serving glasses. Place in the fridge overnight.

For the truffles, add the cream and Gem dark chocolate drops to a heatproof bowl and place over a pot of gently simmering water and stir until the chocolate melts and the mix is combined. Chill this overnight.

The following day, divide the truffle mix into 6 and roll between your hands until you have a round truffle shape.

Dust these truffles in cocoa powder and keep cold until needed.
